Skinny Sweet Potato Fries:
These baked sweet potatoes get so crispy and ‘fry-like,’ that you won’t miss the fat-laden real things. Who needs all those calories when you can have these babies?
ingredients:
- 5 medium sweet potatoes, rinsed, cut into 1/2-inch thick spears
- 2 tablespoons Heart Shape Flax and Sunflower Oil
- 1/2 teaspoon sea salt
instructions:
Preheat oven to 425 degrees and line a shallow baking sheet with recycled foil and lightly oil it.
Toss sweet potato pieces with oil and salt and arrange on baking sheet avoiding overlap. Bake for 30 minutes, turning once to ensure even browning. Serve hot.
Makes 6 servings.
Note:
Variations on this recipe can include adding ½ teaspoon dried basil, oregano or other herbs you love and for spicy fries, add ½ teaspoon chili powder. The spice actually enhances the sweet flavor of the sweet potatoes.
