Roasted Asparagus with Walnuts and Goat Cheese
2 lbs asparagus, washed and tough ends removed
1 T. minced fresh garlic
1/2 - 3/4 c. goat cheese
3 t. flax oil
2 t. extra-virgin olive oil
1/8 c. walnuts
Salt and pepper to taste
Brush asparagus with extra-virgin olive oil, sprinkle garlic, and roast in pre-heated oven for about 15 minutes. Drain any excess oil and garlic. Add salt and pepper to taste. Place chunks of goat cheese on roasted asparagus and sprinkle with walnuts. Drizzle flax oil over dish before serving. Best served as a side dish or appetizer.
